Rick Osborne – Owner and Executive Chef

One of the state’s most experienced Chefs and certainly one most passionate about regional produce, Rick Osborne has worked with some of the best – at London’s famed Le Gavroche restaurant under world renowned chefs, Albert Roux and Michel Roux Jnr, and with Shannon Bennett at Vue de Monde, Melbourne’s only three Chef Hat restaurant.

Toowoomba born and raised, Rick apprenticed at The Marriott Resort and Spa at Surfers Paradise and the Marriott Hotel Brisbane.

Like all great chefs, he answered the call of flavours from far, far away and departed Australia for the world, gaining invaluable experience in Canada (where he worked with the Fairmont Hotel Group in Jasper and Toronto) and the UK. 

He returned home in 2010 and after running a couple of local restaurants, he now has transferred his expertise and passion into the Function side of hospitality.

This is the quality of offerings that Rick and his team now bring to you, an acclaimed Toowoomba team and one that year-round shines the light on flavours of local regional produce.

Matt Toomer – General Manager

Originally from the Southwest of England, Matt has been managing Rick’s venues since 2012.

Matt started Preston Peak Winery Function Centre alongside Rick in 2015 and has since managed the day-to-day running of the venue.

Matt takes great pride in his attention to detail and the personal attention he gives to every guest at the Winery.

As part of his role heading up the Wedding Planning team, prospective couples are assured that every experience they have at Preston Peak will be as professional and seamless as their first impression.

Matt is an invaluable asset to our team.

Brianna Archibald – Functions Manager and Wedding Planner

Brianna has been in the hospitality industry since she was 15 and has gained every academic achievement within the industry.

She has worked at and managed cafés, bars, restaurants and wedding venues on the Gold Coast and in Toowoomba.

Brianna first worked for Rick as a trainee at Kingfisher Cafe ten years ago and has been working as the Functions Manager and Wedding Planner here at Preston Peak since early 2019.

Bri’s calm disposition, ready smile and ability to make every bride feel special has made her an essential member of the Preston Peak team.

Rachel O’Connell – Night Manager and Wedding Planner

Rachel has been working at Preston Peak Winery since 2020.

She is a true testament to Preston Peak’s values and dreams & through hard work has progressed from being a junior member of our waitstaff to a Functions Manager. She is also a member of the Wedding Planning Team and is receiving well-deserved praise from brides for the way she manages their special day.

Rachel has been through and seen it all at Preston – there isn’t a job she has not done here. Rachel is now stepping up to train younger members of staff who are able to lean on her experiences and guidance to ensure our clients enjoy the best experience possible.

Neil Martin – Head Chef

Neil began his career in some of London’s most renowned venues. Most notably, at five star establishments including The Ritz and Claridges Hotel, as well as Le Gavroche and The Westbury Hotel in Mayfair. Neil’s time at Le Gavroche working under Michel Roux ignited a passion for French food and the cuisine’s intricate cooking techniques. 

Moving to Australia in 2010, Neil worked at the then two-hatted 41 Restaurant in Chifley Tower, as well as The Kingfisher Cafe, and the renowned Ortiga, followed by Saké Restaurant & Bar in Brisbane, where he was honoured to work with the team fusing Japanese ingredients with classic French techniques. As Chef de Cuisine at Ananas Bar & Brasserie, Neil was awarded the Best European Restaurant in Sydney for his unique and exciting dishes.

Neil and his family relocated to Toowoomba in 2021. Now happily settled into family life, Neil is ready to focus all his energy into creating menus which represent the training and experience he has gained throughout his career, amongst the beautiful surroundings here at Preston Peak, with a great team behind him. 

Jeff Drewery – Chef

Jeff has been part of the Preston Peak team since 2015 and has enjoyed every moment of the last six years.

A proud Toowoomba local, Jeff has worked in a lot of establishments in his career, including a stint travelling the eastern seaboard for a season working at Mt Kosciuszko.

We were pleased to welcome Jeff back to our team, where he says that we aren’t just a workplace, we are his extended family.

Jeff takes great pride in his work and loves seeing guests enjoy their Preston Peak experience, knowing that adding that special touch has made it memorable.

Tyson Ryan – Chef

Toowoomba born and bred, Tyson attended Downlands College where he participated in many sports including Rugby, softball and basketball while also playing Gridiron for the Toowoomba Wolves and the QLD Sundevils.

Tyson started working at GPO Cafe as a barista where he discovered his love for hospitality and then joined the Front of House team at Preston Peak Winery. Tyson obtained a Chef apprenticeship at the Toowoomba Golf Club and then came back to Preston Peak where he has been developing his technique and skills under some truly talented chefs.

Tyson loves being involved in creating beautiful food for our guests and enjoys knowing that he has been part of making the Preston Peak experience so memorable.

Joe Millar – Groundskeeper  

Joe, or Farmer Joe as we all know him, has been keeping the grounds of Preston Peak beautiful since 2002.

Joe is not only our groundskeeper but also our general handyman – if something needs doing, “Mr Fix-it” gets the call.

Joe heads up a team of three who maintain our amazing grounds which is no small task. They also look after our luxury accommodation and ensure that everything is perfect for our guests.

Never short of a good story, Joe can brighten anyone’s day and we don’t know what we would do without him!
